There is a /lsws/conf/vhosts/Example folder created automatically with a bunch of files: htgroup htpasswd vhconf.conf vhconf.conf0 vhconf.conf.txt.
I clue the /Exampple folder and its files are created once you run docker compose up -d.

But should the appinstall.sh --app wordpress --domain my-site.local command create a /lsws/conf/vhosts/my-site.local folder with the listed above files in it?
Or should I create the config files manually?

Example is the default OLS virtual host, and it's not being used in the docker solution.
Check https://docs.litespeedtech.com/cloud/docker/ols-wordpress/#creating-a-domain-and-virtual-host, you could use the script to create a domain and virtual host first, then create data database and Apps.
Another way is to edit .env file and use demosite script https://docs.litespeedtech.com/cloud/docker/ols-wordpress/#starting-a-demo-site
